Miyan Kuka With Guinea Fowl
Miyan Kuka is a staple in many Arewa homes. It may not be the most familiar soup to someone seeing it for the first time, especially because of its green colour, but those who grew up eating it know how special it is.
I remember my university days in Qatar when my dear friend Salwan saw Miyan Kuka for the first time and asked, “What is this, Sa’eeda?” She jokingly said she would tell my mum that I did not know how to cook. It was so funny because it was her first time seeing it, but for many of us, Miyan Kuka is comfort food. In fact, some of my family members joke that one of the things they would look for in Jannah is tuwo da Miyan Kuka.
My absolute favourite version is made with naman zabuwa, which is guinea fowl. It gives the soup a deep, rich flavour that is difficult to beat.
Ingredients
- 1 whole guinea fowl
- 3 to 5 pieces Akushi Daddawa balls
- 1 tablespoon Akushi Daddawa powder
- ½ cup Akushi palm oil
- 3 medium onions
- 3 pieces tattase
- 7 pieces attaruhu
- 5 garlic cloves
- 1 piece ginger
- Seasoning cubes to taste
- Salt to taste
- 5 litres water
- 4 to 8 tablespoons Akushi
- Kuka powder
Method
- Wash the guinea fowl thoroughly and place it in a large pot.
- In a blender, blend the onions, tattase, attaruhu, garlic, ginger, Akushi Daddawa balls, and Akushi Daddawa powder.
- Pour the blended mixture into the pot with the guinea fowl.
- Add the palm oil and 5 litres of water.
- Cover and cook on medium heat for about 1 hour.
- After 1 hour, adjust the seasoning and salt to your taste.
- Reduce the heat to medium-low and allow it to cook for another 1 hour, or until the guinea fowl is tender and the flavour has fully developed.
- Once the meat is cooked, reduce the heat and add the kuka powder gradually. Stir gently as you add it to avoid lumps.
- Allow the soup to simmer briefly, then turn off the heat.
Kuka Quantity Guide
If you are serving the soup with brabisko, use about 4 tablespoons of kuka powder. The soup should be lighter and not too thick.
If you are serving it with tuwo, use about 8 tablespoons of kuka powder for a thicker, more satisfying consistency.
